When people think of humdrum food, they probably imagine a bowl of peas and carrots. Though colorful, this veggie mixture is likely not at the top of your picky toddler’s wish list. But, peas and carrots are actually pretty good for you. They’re chock full of fiber, thiamin, and plenty of vital nutrients. But, the freshly-picked versions aren’t exactly shelf stable.
