The Alce Nero chick peas are rich in fibre and protein, making them an excellent addition to soups, purées, and broths. To prepare them, we recommend soaking the dried chickpeas in cold water for at least 8 hours, changing the water at least once during this time. Adding salt after cooking can help soften the skin of the chickpeas.
